Erik Walnum is a local private chef specializing in whole food, plant-based nutrition. In 2015, spurred by the arrival of his first child and a pursuit of long-term health and wellness, Erik experienced a "food renaissance" that led him to dive head-first into the world of plant-based eating. He spoke of his experience in transition from an omnivorous diet to an entirely plant-based diet through the lens of a competitive road cyclist and fitness enthusiast. Adjusting his diet allowed him to healthfully lose weight and maintain the power he needed to go from a mid-pack finisher to podium contender.
In this three-course meal, Erik and his wife and fellow chef, Mollie, delighted our taste buds with a vegan interpretation of a gourmet Italian menu. The appetizing Beet Carpaccio was topped with a sprouted almond farmers' cheese, citrus, and micro greens. The main course featured a familiar dish, lasagna, made of Zucchini, sweet potato, fennel, and a cashew ricotta that would have the most avid dairy-lover convinced by its creamy consistency and flavor. The meal finished with a delightfully creamy raw-cocoa and coconut cheesecake with date brownie crust over raspberry.

Beginning life as a surf rat kid on the California coast, Paul built a career as a competitive big mountain skier, spending 12 years on the National and World Freeskiing circuit. After retiring from the high speed, big air and big risk skiing, he then tackled the sport of triathlon, and in 2015 Paul qualified for the IRONMAN 70.3 World Championships in Zell Am See-Kaprun, Austria. Paul has also worked as the head coach for the the Montana Multisport Aquatics youth swim league and EpicBZN Triathlon and has helped countless individuals reach their fitness and athletic goals as an individual and small group instructor.
With a resume like that, clearly he is no stranger to effective training, competition, and injury recovery. In this talk, Paul will provide simple and practical insights into what it takes to optimize your training and recovery regimen so you can spend more time doing what you love and less time sitting on the sidelines.
Dr. Bacon’s goal as a naturopathic doctor is to support people in overcoming their health challenges and lead richer, more enjoyable lives. In this engaging and conversational presentation, she will help us understand digestion and the role it plays in living a fulfilling life.
Dr. Bronwyn's talk was an incredible way to kick off the first event of this series. Her expertise was evident and her talk was informative, engaging, and highly entertaining!
The room was full with 30+ individuals eager to learn more about optimizing their diet to benefit their health and overall livelihood. Dr. Bacon gave us practical tips for combating heartburn, indigestion, and other common digestive ailments that can be solved by simple and effective means.
