Cleaning out one of my 160 gal. stainless steel brewing vessels for kombucha!  

THE TIME TO RAMP UP HAS COME!!  

Right now I brew 75 gallons of kombucha at home. The brewery will be brewing 900 gallons of Kombucha at a time with 450 gallons of that being harvestable finished kombucha. (For those curious I'm halfway between continuous brew and batch brewing) If you haven't brewed this tasty elixir before, one thing to know is that kombucha requires a certain amount of starter culture to brew correctly so I can't just start brewing 900 gallons without hundreds of gallons of starter. So that process is starting today! I'll go from 75 gallons of kombucha to 150 gal. 150 to 300. 300 to 600. And then 600 to 900. Expected time to ramp up.. 12 weeks. That is a very conservative estimation. Hoping more like 8 weeks. With the amount of starter I'm using it should (crossing fingers) brew every 2 weeks.
